Well, the nominative plural is opera. But the genitive plural, which you need above, is operum.

I don't recall that O'Brian ever specified in the book ( HMS Surprise). But given that the sloth was captured in Brazil, perhaps the best guess would be: https://en.wikipedia.org/wiki/Maned_sloth which is three-toed.
